Eggplant Lasagna
This is one of my favorite lasagnas because you substitute unpeeled eggplant for lasgne sheets so it's healthier and lighter. Also, no frying of eggplant required either!
4-5 (abt 5 pounds) washed eggplant, sliced into 1/2 inch round slices
16 oz skimmed shredded cheese - i use a mix of mozzarella and cheddar
2x26 oz pasta sauce or make your own
non stick vegetable spray
additional chopped veg or sliced mushrooms

Helpful Hints
For less cheesy version, omit cheese inbetween the layers and only use the cheese on the top of the lasagna.
You can add any veg ->broccoli, zucchini, carrots or onions or build in the vegetables into your own home made sauce.
Spray non stick vegetable spray on the foil that you are covering the lasagna with. This prevents the cheese sticking to the foil.
