I have had some amazing minestrone soup in the past. One day I tried a new soup recipe and discovered it came close to some I had tried. With additions it comes close.
2 tbsps or more of oil
1 large onion chopped
4 cloves of garlic minced
2 large carrots cleaned and diced
3 cups of water
32 oz tomato sauce
1 19oz can kidney or mixed beans drained and rinsed
28oz of fake chicken broth
2 cups of corn
2 cups of salsa
1 1/2 tsps dried oregano and basil
1/2 cup or a bit more of small pasta such as tubetti or mini shells
