* 1/4 cup(s) lemon juice
* 3 tablespoon oil, olive, extra virgin

* 1/4 teaspoon pepper, black ground
* 1 package(s) tofu, baked, hickory smoked, 6 - 8-ounce package, diced
* 1 small pepper(s), yellow, diced
* 1 cup(s) tomato(es), grape, halved
* 1 cup(s) cucumber(s), diced
* 1/2 cup(s) parsley, fresh, chopped
* 1/2 cup(s) mint, fresh, chopped

Helpful Hints
For best results, run the quinoa through water until the water runs clear. Best way to do this is to put the quinoa in a bowl, fill it with water, and pour out the water while holding back the quinoa with your hand. (I actually started to use my flour sifter as my quinoa cleaner. I put all the quinoa in, and keep washing with water. The water goes through the mesh, but not the quinoa)
