Divine Cheese Danishes
Dairy baked goods are an enchanted world unto themselves, and I believe that for really great results, the dough and not only the filling should be rich in butter.
Besides having an incredible taste, these Danishes boast a special heavy cream coating that gives them a wonderful sheen.
Dairy yeast dough:
1 tablespoon active dry yeast
3 tablespoons water
½ cup sugar
1 cup butter
1 cup milk
3 eggs
4 1\2-5 cups flour
scant ½ teaspoon salt

8 ounces farmer cheese
8 ounces low-fat cream cheese
5 tablespoons sugar
2 teaspoons good-quality vanilla extract
2 egg yolks

2 eggs
4 tablespoons heavy whipping cream
1 tablespoon oil
1 tablespoon sugar

Helpful Hints
Tip: If you don’t have time or patience to make individual pastries, you can roll out the dough into 3 sheets, fill with cheese filling, and roll up to form yeast cake loaves.

What is farmer cheese and where do you buy it in Jerusalem? Also, when I make something with cheese filling, it gets absorbed into the dough. How do you solve this?
