Melt in your mouth scrumptiousness! Easy enough for pre-teens to do on their own.
2 large egg whites
1/8 tsp. salt (I just do a couple of shakefulls into the bowl)
2/3 cup sugar
1 T lemon juice OR 1 tsp. finely grated lemon zest

Helpful Hints
These store very well but go very quickly so I need to make large quantities. What I tend to do in the days leading up to Pesach is at night before I go to sleep, I put up a batch of meringues (takes all of 10 minutes) and leave them overnight in the oven. This way, the recipe doesn't take up precious "oven time" needed for other cakes and roasts etc...
