I tend to get into the habit of stocking up on ingredients for a particular recipe, never to be used, until a new recipe comes up. Thursday was one of those eureka moments. After browsing for beef and apricot recipes online for a while, I found a couple which cooked beef with mustard and apricot jam, which inspired this stew.
454g/1lb cubed chuck stead
500g potatoes, such as Exquisita or Sofia potatoes, sliced in half lengthways
2-3 onions, sliced
2-3 carrots, peeled and sliced
1/2 bottle white wine
1 can tinned apricots in juice
2 tbsp smooth dijon mustard
1 gluten free bouillon or stock cube
1tbsp sugar
salt and pepper to taste
2tbsp olive oil
