Roasted Vegetable Cornucopias
THis looks so elegant and tastes great as a side or appetizer.
1 large egg
1 17.3-ounce package prepared puff pastry (2 sheets), thawed

Roasted Vegetables
2 cups cauliflower florets
2 cups baby zucchini, or 1/2 pound regular zucchini, halved and cut into 1-1/2-inch chunks
2 cups baby patty pan squash, or 1/2 pound regular patty pan squash, cut into 1-1/2-inch chunks
1 cup baby carrots
12 purple pearl onions, peeled and halved
6 ounces cremini mushrooms, trimmed
1/4 cup olive oil
1 tablespoons sage
1 tablespoons marjoram
1/2 tablespoon thyme
1 teaspoon salt
1/4 teaspoon ground black pepper

I assume you can. I made tthem already for yuntif and I am keeping the puff pastry part in the fridge (I dont want then to get squashed in my packed freezer) and the vegetables separate in the freezer.
