I got this recipe from my mechiteniste after my daughter raved about it. The original recipe had margarine, which I rarely use and always try to switch out, if possible, in a recipe. I eliminated it completely and added a bit more mayo to compensate, with fabulous results (my daughter and SIL think it's better than the original :) ).
6 medium sized zucchini, unpeeled, scrubbed and sliced thinly
2 large onions (not spanish), diced
1 15 oz can sliced mushrooms (can be pieces), drained
2 T. oil
3 T. onion soup mix
1/4 cup (lo fat) mayo
5 T. matzo meal
1 tsp garlic powder
salt and pepper, to taste
2 frozen pie crusts

Helpful Hints
The recipe yields 2 pies and freezes beautifully, if you need. It's also fabulous cold, eaten straight from the fridge, when noone's looking!
